GRANITE FALLS, Minn. — On Thursday, March 18 at 7 p.m. Pioneer PBS’s Postcards program will feature stories about a chef from Thailand who lives and works in Madison and a Cajun chef from New Orleans who recently started a restaurant in St. Joseph. The episode will be rebroadcast on Sunday, March 21 at 7:30 p.m. and on Monday, March 22 at 1:30 p.m.

Culinary Artists Mateo Mackbee and Erin Lucas have an extensive backstory to share about how they decided to establish their destination restaurant Krewe in St. Joseph. Mackbee serves up farm-to-table Cajun dishes and Lucas makes pastries from the companion Flour & Flower bakery to reservation-only crowds with limited pandemic seating. They share the story of Mackbee’s Mother, a civil rights activist, and are dedicated to using their restaurant, bakery and farm to promote diversity and teach children and the larger community about food.
Phaeth Worden is known as the “egg roll girl” at the Pantry Cafe in Madison where she works as a waitress. Worden tells the story of her immigration from Thailand to Fresno to Fargo to Madison as she demonstrates the art of making Thai spring rolls. Phaeth has always felt welcomed by the people of Madison. “Here people are into the word ‘community’ -- just doing things for each other,” she said.
